The menu represents the tradition of Chef Ian Kittichai and Chef Pod Jessada, combining Southeast Asian flavor with Taiwanese ingredients.

Chef Ian Kittichai

Chef Ian Kittichai is an award-winning chef, author and television personality. With a variety of restaurants, cookbooks, events and consultancies around the globe, he constantly pushes the boundaries of cuisines and conventions. He is most well-known for his influence on Thai cuisine and his unique approach to classic flavors and ingredients with varied cooking techniques. He strives to show diners that Thai food is more than just Pad Thai and curries.

Chef Ian Kittichai

Chef Ian Kittichai is an award-winning chef, author and television personality. Chef Pod Jessada

Chef Jessada “Pod” Khruapunt is one of the new generation of star chefs from Thailand. Born into a food-loving family in Bangkok, he completed a bachelor’s degree in Culinary Technology at Suan Dusit Rajabjat University.

Chef Pod’s culinary skills were further honed in renowned Bangkok fine dining institutions such as Le Beaulieu and Water Library. He has competed in multiple culinary competitions around the world including the World Association of Chefs Society in Korea, Oceanfest in Australia, the IKA Culinary Olympiade der Koche in Germany and cooked at the 25th anniversary of the St. Moritz Gourmet Festival.

Chef Pod moved to Singapore to train at Alma and then went on to open the halal western cuisine fine dining restaurant, Backyard Kitchen. He moved on to head the kitchen of Ian Kittichai’s Tangerine at Resorts World Sentosa focusing on casual fine dining using regional and sustainable ingredients and Thai flavor profiles.

In 2019 Chef Pod returned to Bangkok to work closely with Chef Kittichai in his kitchen lab and chef’s table, Cuisine Concept. In December 2019 he headed a two-month residency at The Regent Taipei for the Taste Lab collaboration for Chef Ian Kittichai x Chef Richie Lin. He is now the Head Chef of Coast.
